Breakfast Casserole

Ingredients

  • 2 cups Hidden Foods Pancake Mix

  • 1 cup milk

  • 2 eggs

  • 1–1½ cups cooked sausage or bacon (crumbled or chopped)

  • 1 cup shredded cheese (cheddar, pepper jack, or your favorite blend)

  • Optional add-ins: diced bell peppers, onions, spinach, or green chilies

Instructions

  1. Preheat the oven:
    Set your oven to 350°F. Lightly grease an 8x8-inch or similar baking dish.

  2. Prep the meat:
    Cook sausage or bacon until browned and fully cooked. Drain any excess grease and set aside.

  3. Mix the base:
    In a medium bowl, whisk together the pancake mix, milk, and eggs until smooth. The mixture should resemble a thick batter.

  4. Add fillings:
    Stir the cooked sausage or bacon and shredded cheese into the batter. If using optional veggies, fold those in as well.

  5. Assemble:
    Pour the mixture into the prepared baking dish, spreading it evenly.

  6. Bake:
    Place in the oven and bake for 30 minutes, or until the top is set and lightly golden and a toothpick inserted in the center comes out clean.

  7. Cool and serve:
    Allow the casserole to rest for 5 minutes before slicing. Serve warm for breakfast, brunch, or meal prep.
