2 cups Hidden Foods Pancake Mix

1 cup milk

2 eggs

1–1½ cups cooked sausage or bacon (crumbled or chopped)

1 cup shredded cheese (cheddar, pepper jack, or your favorite blend)

Optional add-ins: diced bell peppers, onions, spinach, or green chilies
Instructions

Preheat the oven:
Set your oven to 350°F. Lightly grease an 8x8-inch or similar baking dish. -
Prep the meat:
Cook sausage or bacon until browned and fully cooked. Drain any excess grease and set aside. -
Mix the base:
In a medium bowl, whisk together the pancake mix, milk, and eggs until smooth. The mixture should resemble a thick batter. -
Add fillings:
Stir the cooked sausage or bacon and shredded cheese into the batter. If using optional veggies, fold those in as well. -
Assemble:
Pour the mixture into the prepared baking dish, spreading it evenly. -
Bake:
Place in the oven and bake for 30 minutes, or until the top is set and lightly golden and a toothpick inserted in the center comes out clean. -
Cool and serve:
Allow the casserole to rest for 5 minutes before slicing. Serve warm for breakfast, brunch, or meal prep.
