Pancake Mix Cookies

Ingredients

  • 2 cups pancake mix

  • ½ cup sugar

  • ½ cup melted butter

  • 1 egg

  • ½–1 cup chocolate chips (depending on how chocolatey you want them)

Instructions

  1. Preheat the oven:
    Set your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it.

  2. Mix the wet ingredients:
    In a medium bowl, whisk together the melted butter, sugar, and egg until smooth and well combined.

  3. Add the dry ingredients:
    Stir in the pancake mix until a soft dough forms. Fold in the chocolate chips.

  4. Shape the cookies:
    Scoop tablespoon-sized portions of dough onto the baking sheet, leaving a couple of inches between each cookie. Gently flatten the tops with your fingers or the back of a spoon.

  5. Bake:
    Bake for 10–12 minutes, or until the edges are set and lightly golden. The centers may look slightly soft—that’s perfect.

  6. Cool:
    Let the cookies cool on the baking sheet for 2–3 minutes before transferring them to a wire rack.

  7. Enjoy:
    Serve warm for melty chocolate goodness, or store in an airtight container once cooled.
