2 cups pancake mix

½ cup sugar

½ cup melted butter

½–1 cup chocolate chips (depending on how chocolatey you want them)
Instructions

Preheat the oven:
Set your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it. -
Mix the wet ingredients:
In a medium bowl, whisk together the melted butter, sugar, and egg until smooth and well combined. -
Add the dry ingredients:
Stir in the pancake mix until a soft dough forms. Fold in the chocolate chips. -
Shape the cookies:
Scoop tablespoon-sized portions of dough onto the baking sheet, leaving a couple of inches between each cookie. Gently flatten the tops with your fingers or the back of a spoon. -
Bake:
Bake for 10–12 minutes, or until the edges are set and lightly golden. The centers may look slightly soft—that’s perfect. -
Cool:
Let the cookies cool on the baking sheet for 2–3 minutes before transferring them to a wire rack. -
Enjoy:
Serve warm for melty chocolate goodness, or store in an airtight container once cooled.
