Savory Tomato Bread Pudding

Ingredients

  • 4 cups cubed day-old bread

  • 1½ cups pasta sauce (marinara or roasted tomato)

  • 1 cup milk

  • 3 eggs

  • 1 cup shredded mozzarella cheese

  • Salt and pepper to taste

  • Optional: fresh basil, oregano, or Parmesan for garnish

Instructions

  1. Preheat the oven:
    Set your oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish with butter or cooking spray.

  2. Prepare the custard mixture:
    In a medium bowl, whisk together the milk, eggs, and pasta sauce until smooth and well combined. Season with a pinch of salt and a few cracks of black pepper. Optional: add ½ tsp dried oregano or Italian seasoning for extra flavor.

  3. Combine with bread and cheese:
    In a large bowl, place the cubed bread. Pour the custard mixture over the bread, stirring gently to coat all the cubes. Fold in the shredded mozzarella, ensuring it’s evenly distributed. Let the mixture sit for 5–10 minutes so the bread absorbs the liquid.

  4. Transfer to baking dish:
    Pour the mixture into the prepared baking dish, spreading it evenly. Press down lightly with a spatula to compact slightly.

  5. Bake:
    Bake in the preheated oven for 35–40 minutes, or until the top is lightly golden and the pudding is set (a knife inserted in the center should come out clean).

  6. Cool and garnish:
    Let the bread pudding rest for 5–10 minutes before serving. Optional: sprinkle with fresh basil, extra mozzarella, or grated Parmesan for garnish.

  7. Serve:
    Slice into squares and serve warm as a savory breakfast, brunch, or side dish. Pairs well with a fresh salad or roasted vegetables.
