2 cups Hidden Foods Pancake Mix
(Homestyle, Chocolate Chip, Cinnamon Churro, or Sprinkle Cake — any flavor works!) -
½ cup sugar

½ cup melted butter

1 egg

½ cup chocolate chips
(Optional: swap or combine with nuts, sprinkles, or dried fruit.)
Instructions

Preheat the oven to 350°F and line a baking sheet with parchment paper or lightly grease it.

In a mixing bowl, whisk together the pancake mix and sugar to break up any lumps and evenly distribute the dry ingredients.

Add the melted butter and egg to the bowl. Stir until a soft, thick cookie dough forms.

Fold in the chocolate chips, making sure they’re evenly mixed throughout the dough.

Using a spoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheet, leaving a little space between each cookie.

Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
