2 cups Hidden Foods Pancake Mix (Homestyle or Cinnamon Churro)

Prep the berries:
In a medium bowl, toss the berries with the sugar and lemon juice until evenly coated. Let them sit for 5 minutes to release their natural juices. -
Prepare the baking dish:
Lightly grease an 8x8-inch or similar baking dish. Pour the berry mixture into the bottom, spreading it into an even layer. -
Mix the batter:
In another bowl, combine the pancake mix, milk, and melted butter. Stir until the batter is smooth and just combined—avoid overmixing. -
Assemble:
Pour the batter evenly over the berries. It’s fine if some berries peek through; the batter will bake up around them. -
Bake:
Place the dish in a preheated 375°F oven and bake for 35–40 minutes, or until the topping is golden and cooked through. The berries should be bubbling around the edges. -
Cool and serve:
Let the cobbler cool for at least 10 minutes before serving. Enjoy warm as-is or topped with vanilla ice cream or whipped cream.
