Berry Cobble

Berry Cobble

Ingredients

  • 2 cups mixed berries (fresh or frozen)

  • ½ cup sugar

  • 1 tbsp lemon juice

  • 2 cups Hidden Foods Pancake Mix (Homestyle or Cinnamon Churro)

  • 1 cup milk

  • ¼ cup melted butter

Instructions

  1. Prep the berries:
In a medium bowl, toss the berries with the sugar and lemon juice until evenly coated. Let them sit for 5 minutes to release their natural juices.

  2. Prepare the baking dish:
Lightly grease an 8x8-inch or similar baking dish. Pour the berry mixture into the bottom, spreading it into an even layer.

  3. Mix the batter:
In another bowl, combine the pancake mix, milk, and melted butter. Stir until the batter is smooth and just combined—avoid overmixing.

  4. Assemble:
Pour the batter evenly over the berries. It’s fine if some berries peek through; the batter will bake up around them.

  5. Bake:
Place the dish in a preheated 375°F oven and bake for 35–40 minutes, or until the topping is golden and cooked through. The berries should be bubbling around the edges.

  6. Cool and serve:
Let the cobbler cool for at least 10 minutes before serving. Enjoy warm as-is or topped with vanilla ice cream or whipped cream.
